This standard asks you to explain how and why products use multiple preservation methods working together to keep them safe and usable. You need to describe specific products (using at least three preservation techniques), explain how each method works, and discuss why different products or situations need different combinations of preservation strategies.
What to do, grades and common mistakes
- ·Select a specific product that uses at least three combined preservation mechanisms (like hurdle technology in foods) and explain why this combination is necessary to maintain product integrity
- ·Describe how each individual preservation mechanism works (such as heat treatment, low temperature, moisture removal, fermentation, irradiation, or aseptic packaging) and explain what it protects against
- ·Explain why the same material might be preserved differently depending on how it will be used (such as tramping food versus heat-and-eat meals) or factors like cost, storage life, and environmental impact
- ·Discuss how the preservation methods chosen relate to the nature of the product's materials, what users need from the product, and practical considerations like storage conditions and shelf life
You explain why a product needs combined preservation mechanisms, describe how each mechanism works, and identify why different situations require different preservation approaches.
